- 3 – 4 cups baby spinach, rinsed
- 1 Gala apple, diced
- 1/2 cupdried cranberries
- 3 tablespoons chopped almonds
- 1/2 cup feta cheese, crumbled
- 1/4 cupolive oil
- 1 tablespoonhoney
- 1/4 cup apple cider vinegar
- 2 teaspoons mustard (Dijon or whole-grain)

Directions
1.To make the spinach salad: Prepare the honey-apple cider dressing by whisking olive oil, honey, apple cider vinegar, and mustard together in a small jar until combined. Adjust seasoning with salt and pepper, if necessary.
2.Toss all the spinach salad ingredients together in a large bowl or directly in serving plates. Drizzle with the dressing and serve the apple feta spinach salad immediately. Enjoy! ❤️

I have made this many times and it's delicious. I think there is an error on the oil to vinegar ratio which is usually 2/1. I simply reduced the vinegar in half and it's perfect. Once person mentioned that the dressing was too strong and think it's the vinegar.

So delicious and flavorful. I was nervous because I hate spinach and apple cider vinegar, but I’m glad I gave it a try. Definitely a salad for this summer. So easy to make. I paired it with some chicken.
